    Tips on Pan-Searing Salmon: Place your skillet over a burner at medium-high heat. Preheat the pan until it’s very hot, almost smoking. Place the salmon with its non-skin side — the "pretty" or presentation side — down in the pan. It will stick initially, but will let go once it’s properly seared and the salmon’s natural oils have lubricated the pan. Don’t crowd the pan; if the pieces are too close together, they won’t sear properly. Flip, repeat.
